This balsamic blackberry bliss grilled cheese is a gourmet twist on the classic comfort food, pairing tangy balsamic, sweet blackberries, and creamy cheeses for a stunning flavor combo.

- 4 slices artisanal sourdough bread
- 4 oz aged white cheddar, thinly sliced
- 4 oz mascarpone cheese, room temperature
- 1 cup fresh blackberries
- 3 tbsp balsamic reduction
- 2 tbsp honey
- 1 tbsp fresh thyme leaves
- 2 tbsp butter, softened
- Pinch of sea salt and freshly cracked black pepper
Instructions
- In a saucepan, simmer blackberries, 2 tbsp balsamic reduction, and honey for 5-7 minutes. Mash some berries and let cool 3 minutes.
- Mix mascarpone with half the thyme, a pinch of salt, and pepper.
- Spread mascarpone mix on two bread slices. Layer cheddar on remaining slices. Add blackberry mixture, drizzle remaining balsamic, sprinkle thyme, and top with mascarpone-covered slices.
- Butter the outsides and grill over medium heat for 3-4 minutes per side until golden brown and cheese is melted. Reduce heat and cover if needed.
Notes
Use sturdy, medium-thick bread slices. Allow blackberry mixture to cool before assembling. Freshly grated cheese melts better and prevents soggy bread.
