Description

This homemade version of the Panera favorite combines tender chicken, creamy avocado, smoky chipotle mayo, and melty cheddar on toasted sourdough. A crave-worthy sandwich that saves you money and satisfies every bite.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 4 slices sourdough bread
  • 4 tablespoons chipotle mayo
  • 1 ripe avocado, sliced
  • 4 slices white cheddar cheese
  • 2 tablespoons butter for grilling

Instructions

  1. Season chicken with smoked paprika, garlic powder, salt, and pepper. Cook in olive oil over medium-high heat until golden and internal temperature reaches 165°F.
  2. Let chicken rest for 5 minutes, then slice thinly against the grain.
  3. Mix mayo with chipotle in adobo, lime juice, and salt if making homemade spread.
  4. Slice avocado just before use.
  5. Spread chipotle mayo on each bread slice. Layer chicken, avocado, and cheese on two slices. Top with remaining slices.
  6. Grill sandwiches in butter over medium heat for 3–4 minutes per side until golden and melty.
  7. Cut diagonally and serve hot with extra chipotle mayo on the side.

Notes

Resting the chicken and using room-temperature cheese ensures juicy meat and ideal melt. Customize spice with more or less chipotle.
