Description
This homemade version of the Panera favorite combines tender chicken, creamy avocado, smoky chipotle mayo, and melty cheddar on toasted sourdough. A crave-worthy sandwich that saves you money and satisfies every bite.

- 2 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 4 slices sourdough bread
- 4 tablespoons chipotle mayo
- 1 ripe avocado, sliced
- 4 slices white cheddar cheese
- 2 tablespoons butter for grilling
Instructions
- Season chicken with smoked paprika, garlic powder, salt, and pepper. Cook in olive oil over medium-high heat until golden and internal temperature reaches 165°F.
- Let chicken rest for 5 minutes, then slice thinly against the grain.
- Mix mayo with chipotle in adobo, lime juice, and salt if making homemade spread.
- Slice avocado just before use.
- Spread chipotle mayo on each bread slice. Layer chicken, avocado, and cheese on two slices. Top with remaining slices.
- Grill sandwiches in butter over medium heat for 3–4 minutes per side until golden and melty.
- Cut diagonally and serve hot with extra chipotle mayo on the side.
Notes
Resting the chicken and using room-temperature cheese ensures juicy meat and ideal melt. Customize spice with more or less chipotle.
