Description

Inspired by the classic American sandwich, this Club Sandwich Pasta Salad combines all your favorite flavors—crispy bacon, juicy chicken, fresh vegetables, and a tangy creamy dressing—into a hearty and portable salad perfect for picnics, potlucks, and meal prep.


Ingredients

  • 16 oz rotini pasta
  • 2 cups cooked chicken breast, diced
  • 8 slices bacon, cooked and crumbled
  • 1 cup cherry tomatoes, halved
  • 1 cup romaine lettuce, chopped
  • 1/2 cup red onion, finely diced
  • 1 ripe avocado, diced (add just before serving)
  • 1/4 cup fresh parsley, chopped
  • 3/4 cup mayonnaise
  • 1/4 cup Greek yogurt
  • 2 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 tbsp honey (optional)

Instructions

  1. Cook rotini pasta according to package directions until al dente. Drain and rinse under cold water, then toss with olive oil to prevent sticking.
  2. Cook bacon until crisp, then crumble. Dice chicken, halved cherry tomatoes, chopped romaine lettuce, diced red onion, and parsley. Set avocado aside for later.
  3. In a bowl, whisk together mayonnaise, Greek yogurt, Dijon mustard, lemon juice, garlic powder, salt, pepper, and optional honey until smooth.
  4. In a large mixing bowl, combine pasta, chicken, bacon (reserve some), tomatoes, onion, and dressing. Toss to coat.
  5. Just before serving, fold in romaine lettuce and avocado. Top with reserved bacon and chopped parsley.

Notes

Chop avocado and lettuce just before serving for best texture and color. Reserve extra dressing to refresh leftovers. Customize by adding cucumbers, bell peppers, or using turkey or tuna instead of chicken.
