- 3/4 cup freshly grated Parmesan cheese
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 2 tablespoons unsalted butter
- 1 tablespoon fresh rosemary, finely chopped
- 1 tablespoon fresh thyme leaves
- 1 teaspoon paprika
- 1/2 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper to taste
- 2 tablespoons fresh parsley, chopped, for garnish
- Lemon wedges for serving
Instructions
- Pat steak cubes dry and season with salt and pepper. Let sit at room temperature for 15-20 minutes.
- In a shallow dish, mix Parmesan, paprika, and half the herbs.
- Heat a cast-iron skillet over high heat until smoking hot.
- Add olive oil and sear steak bites in batches, 1-2 minutes per side.
- Add butter, garlic, and remaining herbs. Baste for 1 minute until desired doneness.
- Transfer steak bites to Parmesan mixture and toss to coat.
- Rest for 2 minutes, garnish with parsley and red pepper flakes, and serve with lemon wedges.
Notes
For best flavor, use freshly grated Parmesan and avoid overcrowding the pan to ensure proper searing.
