Description

Ingredients

  • 1.5 pounds sirloin steak, cut into 1-inch cubes
  • 3/4 cup freshly grated Parmesan cheese
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme leaves
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped, for garnish
  • Lemon wedges for serving

Instructions

  1. Pat steak cubes dry and season with salt and pepper. Let sit at room temperature for 15-20 minutes.
  2. In a shallow dish, mix Parmesan, paprika, and half the herbs.
  3. Heat a cast-iron skillet over high heat until smoking hot.
  4. Add olive oil and sear steak bites in batches, 1-2 minutes per side.
  5. Add butter, garlic, and remaining herbs. Baste for 1 minute until desired doneness.
  6. Transfer steak bites to Parmesan mixture and toss to coat.
  7. Rest for 2 minutes, garnish with parsley and red pepper flakes, and serve with lemon wedges.

Notes

For best flavor, use freshly grated Parmesan and avoid overcrowding the pan to ensure proper searing.
