- 2 cups fresh spinach, roughly chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup diced sun-dried tomatoes
- 1/4 cup diced red bell pepper
- 2 tablespoons cream cheese, softened
- 2 tablespoons plain Greek yogurt
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1/2 teaspoon lemon zest
- 1/4 teaspoon red pepper flakes (optional)
- Salt and black pepper to taste
- 4 large (10-inch) spinach or plain flour tortillas
- 2 tablespoons butter for toasting
Instructions
- Heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds, then add spinach and cook until wilted. Drain excess moisture.
- In a bowl, mix cream cheese and Greek yogurt until smooth. Add feta, sun-dried tomatoes, red bell pepper, oregano, lemon zest, and red pepper flakes. Mix well.
- Fold in the cooled spinach and season to taste.
- Spread about 1/3 cup of filling on each tortilla, fold in the sides, and roll up tightly.
- Toast wraps in butter on medium heat, seam side down, for 2-3 minutes per side until golden and crisp.
Notes
For best results, avoid over-wilting spinach and ensure cream cheese is softened for easy mixing. Use no more than 1/3 cup filling per wrap for proper closure.
